How to make a super easy ice cream cake perfect for celebrating

Hello Friends!  Y’all should know by now I am a cake lover.  All flavors, all kinds.  I’d take cake over ice cream any day of the week and thrice on Sunday.  The Mister on the other hand is an ice cream guy.  I can’t say he’s a connoisseur because he really only wants Bluebell although he’ll eat any brand you put in front of him.  So to honor him on his birthday I made him a cake.  Here’s how to make a super easy ice cream cake perfect for celebrating!

How To Make A Super Easy Ice Cream Cake Perfect For Celebrating!

When I say super easy, I mean it.  You need only 3 ingredients to make this a show stopper but adding a 4th ingredient takes it over-the-top yummy.  Let me show you the Cindy-way of doing things.  ๐Ÿ˜‰  And I apologize now for the photos.  It was last minute when I decided to blog about it and I AM NOT A FOOD BLOGGER.  But it’s the taste that counts anyway.

We were having a party so I used a 9″ x 13″ size metal cake pan.  If you don’t need one that large, use a loaf pan.  That too makes a lovely ice cream cake and it’s actually a lot prettier when cut into slices.

The one thing I’d change next time is to not line the cake pan with parchment paper.  It’s just sloppy and not attractive for a party.  However, if I were making it in the loaf pan, I’d absolutely use it because it’s easy to pull the entire thing out of the pan to transfer onto a pretty platter for slicing.

Ingredients for a 9″ x 13″ ice cream cake:

About 24 (depends on size of sandwiches) Mint Chocolate Ice Cream Sandwiches

16 ounces of Cool Whip Topping

Mint Chocolate Oreos

Chocolate Syrup (optional)

Instructions for a 9″ x 13″ ice cream cake:

Step One:  Line the bottom of the pan with Ice Cream Sandwiches breaking off the end to fit.  Eat any extra.  Growing up the Mister’s favorite ice cream flavor was mint chocolate chip.  So I found these but any flavor will work.

Step Two:  Add a layer of Cool Whip topping. Smooth about a one inch thick layer across the sandwiches.

Step Three:  Add another layer of mint ice cream sandwiches then another layer of cool whip topping.

Step Four:  Once you have two layers of ice cream sandwiches with two layers of cool whip topping, drizzle chocolate syrup over the top.  Not necessary but a little more chocolate flavor is extra delicious.

Step Five:  Crush or crumble Oreo Mint Chocolate Cookies over the chocolate syrup.

That’s it!  Top the ice cream cake with plastic wrap and put it in the freezer for about 5 hours or overnight.  If it lasts longer than a day, you can keep it in the freezer up to 3 weeks and it will continue to stay scrumdiliumptious.

Variations for a fantastic Ice Cream Cake:

Vanilla ice cream sandwiches with chocolate chip cookies

Strawberry ice cream sandwiches with real strawberries

Vanilla ice cream sandwiches with bananas and Nilla Wafers

Salted Caramel ice cream sandwiches with fudge or caramel sauce

    Oh my gosh, this looks amazing, Cindy! We have several people in our family that are not cake people and they always get stuck with cookies or pies for their birthday dessert. I’m definitely going to make this for them next time. They will love it! Plus this looks like the perfect way to celebrate the spring-to-summer transition too. Can’t wait to try this recipe!
